Backyard Bunny Cake
Just in time for Easter! A twist on the classic Chocolate Swizz Cake Roll. Spices carrot sponge cake filled with sweet cream cheese frosting and rolled with red walnut and raisin. Its amazing!

Cake:
Eggs 4 each
Sugar 1 cup
Unbleached AP Flour ¾ cup
Ground Cinnamon 1 tsp
Ground Ginger ½ tsp
Nutmeg ¼ tsp
Baking Soda ½ tsp
Baking Powder ½ tsp
Shredded carrots 1 cup
Sifted Powered Sugar ¼ to ½ cup
Cream Cheese Filling:
8-ounce cream cheese 1- ½ packs (or 12 ounces)
(at room temperature)
Butter (room temp) ½ cp (or 1 stick)
Sifted Powdered Sugar 2 cups
Vanilla Extract 2 tsp
Milk 1-2 tsp
Pinch O Salt
1- Mix together the room temperature cream cheese and butter until well incorporated (no lumps) on medium speed
2- Reduce speed and extract and milk.
3- Slowly add in powdered sugar in very small batches.
4- Increase speed once every this mixed and beat until fluffy. About 2-3 minutes
*Make sure to taste : )
Add In Ideas:
Chopped Walnuts ½ cup
Raisins (golden or regular) ½ cup
Shredded coconut 1 cup
For Cake:
1- Preheat over to 350 degrees
2- Grease 17X12 sheet pan, place parchment on top and grease the parchment as well. Super important for getting the cake out.
3- Sift together the flour, baking soda and powder and spices in a bowl and set aside.
4- Mix together the sugar and eggs using the paddle attachment on you mixer and a spoon if you are doing it by hand. Mix until pale color and thick. About 5 min
5- Lower the speed to low and add in the carrots. And mix until incorporated.
6- Slowly add in the dry ingredients.
7- Pour the batter into the greases pan and use a spatula to evenly distribute the batter.
8- Bake for 10-12 minutes or until the cake bounces back after you touch it.
9- Remove the cake from the oven and let in cool for only a few minutes.
10- Sprinkle a towel and the cake with sifter powder sugar. Then flip the cake over (hot) on to the towel. Sprinkle the inside of the cake with powder sugar as well.
11- Roll the cake up into the towel. This will allow the cake to keep that beautiful rolled shape. Allow the rolled cake to cool completely on a wire wrack.
12- After cooling, slowly unroll the cake and spread the cream cheese mix evenly around the cake. Get those edges!!
*This is when you would add your raisin, walnuts or whatever else you want. Just sprinkle those goodies on top of the cheese filling evenly.
13- Reroll the cake up without the towel. Place the cake on a plate or your serving platter.
**This is where the decorating begins… you can spread some cheese frosting over the entire cake and press the coconut on like a tradition Easter cake. Or you can pipe some little frosting flowers around the cake and on top. You can use orange food coloring with some leftover frosting to make carrots for the top. Or get some amazing Easter sprinkles or candy from the store and get creative! Easter candy is the best!!
