White Peach and Wheat Berry Salad

White Summer Salads in the Summer Wind..


I’ve been doing a lot more cooking at home recently, due to my new roomie, and I seem to be coming up with some neat little concoctions. This first salad is full if fiber, Vit. A, B, C, and E and folic acid from our protein Mr. Wheat berry. The white peaches add a natural sweetness, while the Balsamic adds that acid for a complete taste bud work out!!

White Peach and Wheat Berry Salad

Wheat Berries                                   1 cup

Water                                                 4 cups

Garlic Cloves (smashed)                   2 each

*First rinse the wheat berries (if you have time, soak them overnight to cut down your cooking time). Add the water, smashed garlic and wheat berries together in a small pot.  Cook on medium low heat for about 40 to 45 minutes.

Safflower Oil                                      2 Tbl

White Peach (diced)                         2 each

White Corn                                        1 ear

Scallions (green onions)                   3 each

Whole Raw Almonds                         1 cup

Sea Salt                                               1 tsp

*Heat the safflower oil in a sauté pan for 1 minute, or until hot. Add peaches, corn , green onions and almonds in. Sauté for no more them 2 minutes. It’s a quick sauté to keep all the different textures of the ingredients, but still enough heat to bring out those sugars!

*In a bowl, toss the cooked wheat berries, fruity mix with ¼ cup of Aged Balsamic Vinegar and the salt. White peach , balsamic and the crunch of a healthy almond! Summer just doesn’t get any better!!
