Cookie Dough Bites
Makes- About 20- 22 balls (I eat a lot of mix so I'm not sure- Don't judge! You will to just wait)
Here is what you'll need:
- 1 1/2 cup unsalted, raw cashews (or almonds)
- 3/4 cup rolled oats
- 3/4 cup Whole Wheat Flour
- 1 tsp Sea Salt
- 4 Tb Organic Cane sugar or brown sugar
- 2 tsp alcohol free vanilla extract
- 1/3 cup Organic Maple Syrup
- 1 cup Dark or vegan chocolate chips or shavings
(You could do 1/2 cup of raisins instead of chocolate or 1 cup peanuts for change things up a bit)
Easy Cheesy Instructions:
Place the cashews and oats into a food processor and let 'er rip. You are looking for a crumble here, not a dust!
Then, add in the sugar, salt, and wheat flour. Pulse for a few seconds. Then add in the maple syrup and vanilla and pulse until combined. Place the dough into a bowl.
Add in the chocolate chips (or if your are getting wild, peanuts or raisins). I even took the route of purchasing a 1# dark chocolate dark and shredding some bits off.
Mix all the goodies together well in a bowl with your hand. Don't be scared. The dough us a bit sticky and that's ok. If it starts to get difficult to work with, just wet your hands a bit.
Taste!! You must taste everything!!! How will you know if it's good or not?
After you have achieved the right chocolate to maple ratio, roll the dough into little balls and store in the freeze. They will be alright at room temp for a few hours but that's it. Make sure to keep these babies cold!
