Coconut Strawberry Thumbprints

These cookies are great for Spring afternoons or bad TV marathons on the couch. 

What you'll need:

3 cups flaked coconut (sweetened or un is your choice)

2 cups Almond flour or Hazel Nut Flour

1 tsp Sea Salt

1 cup Organic Maple Syrup

1/2 cup coconut butter, room temp (I used Mana- pic below to help)

​2 tsp Vanilla extract

For Grandma's Strawberry Jam:

2 1/2 to 3 cups Organic Strawberries (Michigan's when in season and frozen when not)

1/2 cup Organic Maple Syrup

2 tsp Vanilla Extract

1 Tb Agar Agar flakes


For the Jam (Do this at least 1 to 2 hours before):

Wash and quarter the fresh strawberries (thaw the frozen). Place the berries, maple syrup, and vanilla in a pot and slowly bring to a simmer. Allow the berries to cook unitl they are tender. About 10 to 15 minutes. If they look like they may stick, you can always add a LITTLE water to the pan. Once the berries are soft, use the blender or hand blender the buzz until super smooth. 

Place the berries mix back in the pan and whisk in the Agar Agar. Now, agar agar will only work if it is dissolved completely. After that, it will thicken the jam while it's cooling. Make sure to dissolve it all the way. If you see the flakes in the mix, it's not dissolved. Place the hot jam in a bowl and allow it to cool completely before putting on the cookies.

What to do for the cookies:

irst, melt the coconut butter, using the double boiler method, until liquid. Watch this guy! He'll burn on ya!

Prevent to oven the 275 degrees and line 2 baking sheets with parchment paper. 

In a bowl ,add the coconut flakes, salt and flour. Mix them together.

Pour the melted coconut butter, maple syrup and vanilla over the coconut mix and mix well .

Grab a ping pong sized bit of the mix in your hand and place in on the cookie sheet. Press your finger into the middle of the cookie to create a home for the jam. You may want to reshape the sides of the cookie a bit. They may crack a bit. Also, the dough may be a little sticky. That;s perfect! Just make sure to wet your hands while playing with it. Proceed with all the mix.

You wont need a lot of space between these cookies so no need to worry. I was just being lazy : (

Once the jam is cool and set, place a tablespoon or so (give or take the size of the cookies) in the "cave" of each cookie. If you have left over jam, it makes a terrific PB and J!

Bake for about 18 to 20 minutes and the rotate your pans. If your oven is like mine, the left side is MUCH hotter then the right side. I wonder if ovens are like their owners? Odd..

After you rotate, bake for another 18 to 20 minutes. Mine took the entire 40 minutes but yours possibly not.
